Big Belly Bites Teriyaki - Pineapple Coleslaw





Coleslaw is an underrated side dish that goes with many meals. We decided to make a unique, refreshing, and crunchy twist that will be the talk of your next meal! If you like teriyaki and pineapple you are sure to be in for a treat! We love adding the Crunchy Topping right before digging in, but it's only optional for this recipe.


Ingredients:

Coleslaw

  • 1 Cup Shredded Green Cabbage

  • 1 Cup Shredded Red Cabbage

  • 1/2 Cup Shredded Carrots

  • 1 1/2 Cup Chopped Pineapple

  • 3 Tbsp Pineapple Juice

  • 1/2 Tbsp White Vinegar

  • 1 1/3 Tbsp Big Belly Rubs - Teriyaki

Crunchy Topping

  • 1/4 Cup Butter

  • 1 Package Dry Ramen Noodles - broken into small pieces

  • 2 Tbsp Sugar

  • 1 Cup Sliced Almonds

  • 1 Tbsp Sesame Seeds

  • 2 Tbsp Big Belly Rubs - Teriyaki


Process:

Coleslaw

  • Mix cabbage and carrots into a bowl.

  • In a separate bowl, combine remaining ingredients and mix thoroughly.

  • Combine slaw sauce and slaw mix.


Crunchy Topping

  • Melt butter on medium heat.

  • Add the ramen noodles and coat in melted butter.

  • Mix in sugar and stir frequently enough to prevent noodles from burning.

  • Once browning starts add the sliced almonds and sesame seeds.

  • Mix in Big Belly Rubs - Teriyaki.

  • Sautee until browned and put into a separate bowl to rest for 5-10min before serving.

  • Add your desired amount to the slaw (or salads) and enjoy!
